🍷 Palo Cortado

A rare Sherry with the aroma of Amontillado and the full taste of Oloroso.

Palo Cortado is a rare type of sherry. Its aroma is like Amontillado, with notes of nuts and dried fruit, while the taste is full and rich, like Oloroso. It combines traits of two styles and is therefore considered special. The wine is dry, without sweetness.

It is created in different ways. Everything begins as a light sherry that develops under a layer of yeast called flor. But in some barrels this layer unexpectedly disappears. Then the sherry is aged further without the yeast, with access to air, and becomes fuller. Barrels with such wines are marked with a special sign and set aside.

In the past Palo Cortado was seen as a happy accident because it could not be predicted. Today the style is also made on purpose. The word cortado means cut, and palo means stick, the mark that was chalked on the barrel.

Palo Cortado is produced in small amounts and aged for a long time, so it is costly. It is served at room temperature in small servings, usually after a meal or with aged cheeses.
