Saint Jean Pâtes farcies is the line of fresh Filled pasta in which Saint Jean goes beyond its classic ravioles. It has two ranges. Plaisir covers everyday filled pastas with a generous filling and an egg-rich dough: three French cheeses, 12-month Comté AOP, chanterelles with Drôme parsley, grilled peppers with Espelette pepper, and Boursin garlic and herbs cheese. Organic versions include aged goat's cheese with thyme, sun-dried tomatoes with rosemary, and mushrooms with wild garlic.
The Sélection range offers large ravioli (Grandes Ravioles), an elegant format inspired by restaurant cooking. The fillings are cooked ceps, Roquefort cream, morels in cream, Beaufort AOP and smoked salmon; the website also has recipes with langoustines. The company stresses the careful selection of ingredients.
These filled pastas are designed for quick everyday cooking: they are boiled or pan-fried and served with cream sauces, vegetables or salad. Like all ravioli they are close to classic Italian Ravioli, but with the flavours of French regions.
