📜 Vin Santo del Chianti Classico
A sweet wine from partly dried grapes, long aged in small casks, from Chianti Classico.
Vin Santo del Chianti Classico is a sweet wine from partly dried grapes, aged for a long time in small casks, from Chianti Classico in Tuscany. The name is protected as a geographical indication of the European Union and is listed in the eAmbrosia register.
The wine is made from grapes that, after picking, are dried on straw mats or hung from beams in a ventilated room. The berries lose water, and more sugar remains in them. Then the juice is pressed and sent to small casks, where the wine ferments and ages for several years. The result is a thick amber drink with notes of nuts, honey and dried fruit.
The main grapes for the white wine are Trebbiano and Malvasia. The rosé style, Occhio di Pernice, is made with Sangiovese added. There are also sweet wines without a stated colour.
Traditionally in Tuscany Vin Santo is served with almond biscuits called cantucci, dipped into the wine. It is sipped in small amounts after a meal. As with any alcohol, it should be drunk in moderation.
