🍷 Weissherbst
German rosé made from a single dark grape variety.
Weissherbst is a special kind of German rosé. It is made from a single dark grape variety, and that variety must be named on the label. Most often it is Pinot Noir, called Spätburgunder in Germany, but other varieties are used too.
It is made like any rosé wine: dark grapes are pressed and the juice stays on the skins only briefly, so it takes on just a little colour. The name means roughly “white autumn” and refers to the pale colour. The term is defined in German wine law, and the wine must be at least of regional quality wine level. Most Weissherbst comes from Baden and Württemberg.
The key difference from the similar Rotling is the fruit. Rotling is made from a mix of white and red grapes, while Weissherbst uses only one red variety. It is usually a fresh, light and fruity German wine meant to be drunk young.
