Cambozola Classic is the classic Cambozola: a double-cream soft cheese in which noble cultures form fine blue veins.

Cambozola Classic is the classic version of Cambozola, the German soft cheese with blue noble cultures.

According to the maker, its secret lies in the high-quality noble cultures in the milk: during ripening they form a fine blue marbling in the paste. As a double-cream cheese (Doppelrahmstufe), Classic is very creamy, with a mild spice. Its lactose content is always below 0.1 g per 100 g because the cheese ripens naturally.

Cambozola was created in 1980 by cheesemakers in Kempten in the Allgäu; Classic is made by the family company Käserei Champignon Hofmeister at its plants in Bavaria and Saxony. It is sold by weight at the cheese counter and pre-packed in 150 g and 400 g portions; the 150 g pack leaves the cheese enough air to keep ripening.

How to use it: serve Classic on a cheese board with bread and fruit, stir it into creamy pasta sauces or bake it on toast. Take it out of the fridge half an hour before serving so its creaminess and aroma can develop.

The brand also offers the lighter Cambozola Balance and Finesse with garlic. Compare Classic with other blue cheeses such as Roquefort and Danablu.
