📍 Chablis and Grand Auxerrois
Northern Burgundy with mineral Chardonnays.
Chablis and Grand Auxerrois is the northern part of Burgundy, France, in the Yonne department. It is the most northerly of Burgundy’s wine areas, and the climate is cooler than further south. The main grape is Chardonnay. Among reds, Pinot Noir is grown.
The centre of the area is Chablis. Limestone soils with the remains of ancient sea shells give the wine minerality and freshness. The classification goes in steps: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. The wines are usually dry and pale, with bright acidity and citrus and apple notes.
Other names lie nearby: Saint-Bris, Irancy and Vézelay. Irancy is known for reds made from Pinot Noir. Saint-Bris is the only Burgundy name that allows Sauvignon Blanc.
The area suffers from spring frosts, and growers must protect the vines, including by heating. Chablis and Grand Auxerrois is part of Burgundy and shows how a cool climate gives mineral wine. Alcohol is for adults.
