Famous dry white wines from Chardonnay grown on the limestone hills around the town of Chablis.

Chablis is a famous dry white wine from Burgundy in France. It is made from Chardonnay on the limestone hills around the town of Chablis. This is the northernmost district of Burgundy, so the climate is cool and the wine comes out fresh. The name is protected as a designation of origin (PDO). The soil in Chablis is special: Kimmeridgian marl, a mix of clay and lime with fossil shells. It gives the wine a mineral, "flinty" character, with notes of lemon, green apple and chalk. The wine is usually matured in steel tanks, sometimes in oak, and comes out clean rather than buttery. There are four levels: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru, the highest. The upper levels grow on the best slopes and can age for many years. Chablis is served chilled with oysters, fish and seafood. It is one of the best-known white wines in the world, and its name is often misused for any white wine, but real Chablis comes only from this area.
