🍷 En rama Sherry
Sherry bottled straight from the cask with almost no filtration.
En rama sherry is sherry bottled straight from the cask with almost no treatment. The Spanish phrase means 'raw' or 'in its natural state'. Ordinary sherry is fined, filtered and chilled before bottling, while en rama goes through these steps only minimally.
Most often the pale sherries are bottled this way: fino and manzanilla, which mature under a layer of flor yeast. Producers like to draw the wine in spring or autumn, when the flor is thickest and most active.
En rama tastes brighter and fuller than ordinary fino, with stronger salty, bready and almond notes. The colour may be slightly deeper, and a light sediment can appear. That is normal.
Such wine does not keep well. It is best stored cool and drunk within a few months of bottling, and an opened bottle within a couple of days. En rama sherry is part of Spanish wine and of sherry tradition.

⚠️ Wine contains alcohol: adults only, drink in moderation. Wine usually contains sulphites; egg white or milk proteins are sometimes used for fining — important for allergies and for vegans.
