🍷 Pale Cream
A sweetish pale sherry: Fino sweetened with concentrated must.
Pale Cream is a light-coloured, sweetish sherry from Spain. Its pale gold colour is like that of Fino, but the taste is softer and sweeter. In essence it is a dry Fino or Manzanilla that has been sweetened.
The base wine comes from the Jerez area in southern Spain. First it ages under a film of flor yeast, like any Fino, which keeps it pale and fresh. Then rectified concentrated grape must, or sometimes a sweet wine, is added. By the rules Pale Cream has 45 to 115 grams of sugar per litre. Alcohol is usually around 17%.
Pale Cream differs from ordinary Cream sherry in colour and style. Cream is based on dark Oloroso, while Pale Cream is based on pale Fino. Pale Cream is served chilled as an aperitif or with pâté, cheese and fruit. The style became popular in the second half of the 20th century, especially in Britain. It is a strong wine, drunk in small glasses.
