Fino is a pale, dry sherry that ages under a film of flor yeast. Sherry is made in southern Spain, in Andalusia, around the town of Jerez de la Frontera. Fino comes from the white Palomino grape. The flor film covers the wine in the barrel and protects it from air. This kind of ageing is called biological ageing.
Fino has about 15% alcohol and is aged for at least two years. The wine is pale and dry, smelling of almonds, yeast and sea air. It is served cold, often as an aperitif, with olives, nuts, seafood and jamón. After opening, the bottle quickly loses freshness, so it is best finished within a few days.
Styles related to fino are manzanilla, which matures in the town of Sanlúcar de Barrameda, as well as amontillado and pale cream. There is also fino en rama, unfiltered and taken straight from the barrel. Fino is a flor wine and one of the most recognisable Spanish styles.
