🍷 Manzanilla

Fino from the seaside town of Sanlúcar de Barrameda, with a slightly salty taste.

Manzanilla is a dry, pale wine of the fino type from the coastal town of Sanlúcar de Barrameda in southern Spain. It is one kind of sherry. The town stands at the mouth of the Guadalquivir River on the Atlantic coast, and the climate here is damper and cooler than deeper inland.

The wine is made from the white Palomino grape. It is aged in barrels under a film of yeast, called flor, using the solera system. Because of the damp sea air, the film here is thicker and lasts all year. So Manzanilla is especially light and pale, with a salty tang and aromas of almond and herbs. Strength is about 15%.

Manzanilla is tied to fino, a very close type, and generally to flor wines. It belongs to Spanish wine. It is usually served well chilled with seafood, olives and tapas, and drunk young: once bottled it is best used up quickly. There is also an unfiltered en rama version, taken straight from the barrel. The name matches the Spanish word for chamomile.
