KOMO Hard Cheeses is the range of rennet cheeses that Dubnomoloko makes from cow's milk in Dubno, Rivne region, Ukraine. It is the largest group in the brand's portfolio.
The range includes Horikhovyi (walnut), Staryi Hollandets, Hollandiia, Tradytsiinyi KOMO, Kantri, Havarti, Smetankovyi, Tenero Milk, lactose-free Tenero, a cheese for coffee, Fistashkovyi (pistachio), Gouda Yevropeiskyi, Maasdam, Cheddar, and the aged Golder and Grande. Most are pressed Dutch-type cheeses close to gouda and edam; maasdam has large eyes, while cheddar and the aged cheeses are firmer and fuller in flavour. In international terms most of them are semi-hard cheeses.
They are sold as pieces, slices and by weight. According to the producer, the plant makes more than 15 million kg of hard cheese a year, with automated production stages.
How to use: on sandwiches and cheese boards, in salads, and baked with pasta or pizza. Lactose-free Tenero suits people avoiding lactose. Keep the cheese in the fridge wrapped in film or paper and take it out 20–30 minutes before serving so the flavour opens up.
