Marilungo Maccheroncini di Campofilone IGP
Marilungo's PGI egg pasta of first-extraction durum wheat semolina and Marche free-range eggs, no water, dried on paper for 24–36 hours.
Marilungo Maccheroncini di Campofilone IGP are the protected egg pasta of Campofilone in the version of La Pasta di Campofilone Marilungo. The company lists them among its cuts as Maccheroncini IGP and states that all its pasta is made from coarse first-extraction semolina of durum wheat from Umbria, Marche and Tuscany and fresh eggs from free-range Marche hens, without water.
The sheet is rolled very thin and cut into fine strands, which are laid on paper sheets, dried slowly at low temperature for 24–36 hours and packed by hand. The pasta is sold in 250 g boxes and in 500 g and 1 kg catering packs. Like all of the company's pasta, it cooks in under two minutes, and 250 g serve four people.
Marilungo notes that in 2013 the maccheroncini became the first egg pasta in Europe with PGI status. They are served with meat ragù, light sauces or in broth.
