De Carlonis Maccheroncini di Campofilone IGP are the protected egg pasta of Campofilone made by Pastificio De Carlonis, a member of the maccheroncini producers' association. The company stresses that under the PGI specification the maccheroncini may only be made within the municipality of Campofilone.
According to the company, their key features are a high share of eggs – about ten per kilogram of semolina –, a sheet rolled as thin as a veil, a very fine cut, and the typical paper sheets on which the pasta is laid so that it dries evenly and gradually over its whole surface. Thanks to the fine cut they cook very quickly, in about one minute.
The company describes Maccheroncini di Campofilone as the first egg pasta in Europe to receive PGI status. They are sold in 250 g packs and served with meat ragù, light sauces or in broth.
