🍷 Maury
A sweet fortified Grenache wine from Roussillon.
Maury is a sweet fortified wine from Roussillon in the south of France. It is made around the town of Maury from Grenache, a red grape. The vineyards lie on hill slopes where it is hot and dry, and the berries gather a lot of sugar.
The secret of Maury is that grape spirit is added to the fermenting must before all the sugar has turned into alcohol. Fermentation stops, and the wine stays sweet and strong. This method is called vin doux naturel. The wine is aged in barrels, sometimes in the sun, and gains notes of dried fruit, cocoa, coffee and nuts.
Young Maury is usually fruity, while aged ones are more complex, with shades of coffee and dried fruit. It is served with desserts, chocolate and blue cheeses. Maury belongs to French wine and stands beside other vins doux naturels of Roussillon. Because of its strength and sweetness it is drunk from small glasses.
