🍷 Tokaji Eszencia

Process ✔ Checked: 10.2026 · sources: 3 Updated:

Juice that seeps out on its own from noble-rot berries; almost a syrup.

Eszencia is the Tokaj juice that flows by itself from berries affected by noble rot. It is almost a syrup: very thick, sticky and sweet. It is made in Tokaj, a wine area in northeastern Hungary. The Tokaj area continues into Slovakia.

Berries dried by noble rot are piled in a container. Under their own weight a thick juice drains from them, with at least 450 grams of sugar per litre. Fermentation goes very slowly, over years, and little alcohol results, often only 3–5%. Eszencia is kept for a long time, for decades. It is drunk not by the glass but by the spoonful, in drops, or added to other wines.

Eszencia belongs to Tokaj wines and is related to Tokaji aszú, from which more widespread sweet wines are made. It is a rare and expensive product. Like anything sweet, it is best tasted in small amounts.
