Mountain sparkling wines made by the traditional method in Trentino.

Trento is a mountain sparkling wine made by the traditional method in Trentino in northern Italy. The name is protected as a designation of origin (PDO). The method is the same as for Champagne: second fermentation in the bottle. Trento uses Chardonnay, Pinot Noir, Pinot Blanc and Pinot Meunier. The vineyards lie in the mountains at altitude and give berries with high acidity, so the sparkling wine is fresh and fine. Big daily swings in temperature, warm by day and cool at night, preserve aroma. The wine is then aged on its yeast lees: by the rules at least 15 months. White and rosé. The taste is apple, citrus, fresh bread and almond. Fine bubbles and good acidity make the wine light and elegant. The word "Trento" on the label speaks of both method and place. Trento is served as an aperitif, with seafood and starters. It is close to other traditional-method sparkling wines but is marked by its mountain region.
