Di Martino's double-length dry pasta, wrapped by hand: long candele, ziti, mezzani and spaghetti.

Di Martino Formati Doppia Lunghezza is a line of double-length dry pasta that the Di Martino factory wraps by hand. It includes long candele, long ziti, long mezzani and long spaghetti. It is made from Italian durum wheat semolina and water and extruded through bronze dies. The long mezzani and long ziti are labelled on the website as Pasta di Gragnano IGP.

The company explains why hollow shapes are broken by hand rather than cut. Long tubes such as candele, ziti and mezzani are dried vertically, hung on canes. Open at one end only, they release moisture more slowly: drying can take 24–48 hours longer than for short pasta, and the pasta gains a rich flavour with notes of almond and hay. In the past, pasta in Gragnano was sold loose, wrapped in blue "carta maccheroni" paper.

Before cooking, the pasta is broken into several pieces. Candele are recommended with rich sauces such as Neapolitan ragù, and ziti with intense dressings. This is pasta for Sunday and festive meals.
