Di Martino's line of large and unusual dry pasta shapes from Gragnano: paccheri, calamarata, millerighe, conchiglioni and trottole.

Di Martino Formati Speciali is Di Martino's line of large and unusual dry pasta shapes from Gragnano. Like the rest of the company's pasta, it is made from Italian durum wheat semolina and water, extruded through bronze dies and dried slowly. Several shapes are labelled on the website as Pasta di Gragnano IGP, among them calamarata, mezzi paccheri, millerighe, conchiglioni rigati, trottole and ziti.

The line includes paccheri, large tubes from the Neapolitan tradition with a porous surface; mezzi paccheri, half their length; and ridged millerighe of the same size. Calamarata resembles squid rings, bombardoni are big ridged tubes, conchiglioni rigati are large shells, and eliche giganti and trottole are chunky spirals. There are also long special shapes: long fusilli with a hole, manfredine with ruffled edges (also called mafaldine or reginette), mezzani and ziti.

The company recommends paccheri for baked and pan-tossed dishes and bombardoni for robust sauces. The line suits festive meals, Neapolitan ragù and fish and seafood dishes.
