🍷 Dry vermouth
Pale, unsweet vermouth used in the Martini cocktail.
Dry vermouth is a pale, unsweetened vermouth. Vermouth is an aromatised fortified wine: spirit, herbs, roots and spices are added to white wine. The name comes from the German word for wormwood, the key herb of the infusion. Dry vermouth has little sugar, usually below 50 grams per litre.
This style is especially linked to France, where vermouth developed around Chambéry. It is usually pale gold, with a delicate herbal aroma and a light bitterness. The strength is around 15 to 18 percent, higher than ordinary wine.
Dry vermouth goes into the martini cocktail, usually together with gin. It is also added to sauces and stews in place of white wine. Chilled, it is drunk on its own as an aperitif, often over ice.
An opened bottle of vermouth is kept in the refrigerator because it oxidises faster than ordinary wine. It belongs among wine cocktails and aromatised wines.
