🍷 Flor wines
Wines aged under a film of special yeast on the surface, with a nutty, salty taste.
Flor wines are wines that mature under a film of special yeast on the surface. The film is called flor. The taste of these wines is nutty and slightly salty.
Flor forms in a barrel that is not filled to the brim. The yeast covers the wine with a thin layer and shields it from air. So the wine does not oxidise, stays pale and takes on nutty, almond notes. This kind of ageing is called biological ageing. Flor needs a certain strength of wine, usually about 15%.
The best-known flor wines are fino and manzanilla in Spain, made in Jerez and Sanlúcar. In France, vin jaune is made this way in the Jura. In Hungary, dry Szamorodni in Tokaj can be aged in a similar way. All these wines belong to different countries but are linked by one idea: wine aged under a living film. They are served chilled, with appetisers, olives, nuts and seafood. These are wines with an unusual, sharp taste that takes getting used to.
