🥃 Slivenska Perla (Sliven grape rakia)
Bulgarian wine spirit with an EU GI from the Sliven area: Muscat aroma of rose and geranium, spirit drawn off at 62–65% vol.
Slivenska Perla (Сливенска перла, also known as Sliven grape rakia) is an EU-protected geographical indication for a Bulgarian wine spirit from the Sliven area in the south-east of the country, one of the first Bulgarian “special” grape rakias. Its Muscat aroma combines rose and geranium; the spirit is drawn off at 62–65% vol. and bottled from 40% vol.
The zone covers 16 localities in the municipalities of Sliven, Nova Zagora and Tvarditsa, and since 2023 also Tenevo, Topolitsa and Troyanovo, with 4,010 ha of vines. According to the 2015 file, the spirit consisted of about 85% Muscat Ottonel and 15% Tamyanka, while limited series used 80% Muscat Ottonel, 10% Tamyanka and 10% Pearl of Csaba. The 2023 amendment added Ugni Blanc, Aligoté and Glera.
The grapes are picked by hand at a sugar content of at least 19% and processed within a day; the mash macerates for 72–96 hours. The wine is distilled as quickly as possible in a DK-5 column still rated at 24,000 l per day and two DK-1 stills rated at 90,000 l per day. The design, the share of phlegm, the temperatures and the draw-off strength were set in 1979. Most of the spirit is stored in stainless-steel tanks, the best batches in oak, partly Strandzha oak.
Its history is tied to the Shevka cooperative (1920), which brought the first stills from France; industry standards date from 1980 and 1985. The name was approved by Order No. T-RD-27-14 of 27 November 2013, and the amendments by Order No. RD-16-617 of 2 June 2023.
Why it matters for you. Regular Slivenska Perla has not necessarily seen oak: the colour of batches without a barrel is adjusted with caramel. Oak ageing applies to special and limited series. Read the label. WHO reminds us: there is no safe level of alcohol consumption.
