Liguori's special regional shapes with Pasta di Gragnano PGI status, such as paccheri, calamarata, conchiglioni and orecchiette.

Liguori Le Speciali IGP is Liguori's range of special regional shapes from Gragnano. Like the core range, it is dry durum wheat pasta with Pasta di Gragnano PGI status.

The raw material is Italian durum wheat semolina with a traceable supply chain. The dough is extruded through bronze dies and dried slowly at low temperature for a certified 9 hours. The protein content is 14.5%, and the pack and label are made of fully recyclable paper.

The range covers large shapes from southern Italy: smooth and ridged paccheri, calamarata (wide rings), conchiglioni (large shells), Neapolitan-style rigatoni, fusilloni, long hollow fusilli (fusilli lunghi bucati) and orecchiette from Apulia.

These shapes suit thick sauces: ragù and sauces with seafood, ricotta or vegetables. Conchiglioni and paccheri are often stuffed and baked, and calamarata is traditionally served with squid.

The range is made by Liguori, a pasta factory on Via dei Pastai in Gragnano whose history goes back to 1795. The company follows its certified "Liguori method": durum wheat from southern Italy, slow kneading with spring water from the Lattari Mountains, bronze dies and slow drying at low temperature.
