Mancini Grani Turanici
Mancini's organic dry pasta from the ancient wheat Triticum turgidum subsp. turanicum grown on the farm: spaghetti, penne and sedani.
Mancini Grani Turanici is a range by Mancini Pastificio Agricolo in Marche made from the ancient wheat Triticum turgidum subsp. turanicum. According to the maker, this is an old subspecies of durum wheat selected more than 4,000 years ago in the Khorasan region of north-eastern Iran. It was also grown around the Mediterranean, including Italy, but was abandoned in modern times because of its low yield.
Since 2014 the farm has grown this wheat together with the Prometeo association and the agronomist Oriana Porfiri, and it has developed specific processing methods for it. The pasta is made from organic semolato of turanicum wheat and water, extruded through round bronze dies and dried for 40 hours at 36–46 °C. It has an earthy colour and a marked smell of grain.
The range has three shapes: spaghetti (2.2 mm, 260 mm, cooking time 7–9 minutes), smooth penne and sedani with twenty ridges. It is dry pasta from a special durum-type wheat, best served with simple sauces that keep the taste of the grain.
