Mancini's main range: 27 dry pasta shapes from semolina of the farm's own durum wheat and water, extruded through bronze dies.

Mancini Linea Classica is the main range of Mancini Pastificio Agricolo in Monte San Pietrangeli, Marche. It is dry durum wheat pasta made from wheat the farm grows in its own fields: the only ingredients are semolina and water. The dough is extruded through round bronze dies and dried slowly, with a separate schedule for each shape. Spaghetti (2.2 mm across, 260 mm long) dry for 36 hours at 36–46 °C; paccheri dry for 23 hours at 36–55 °C.

The range has 27 items. Long shapes: spaghetti, spaghettini, spaghettoni, square spaghettoni, chitarra (close to spaghetti alla chitarra), linguine, bucatini, capellini, fettucce and long fusilli. Short shapes: paccheri, mezzi paccheri, calamarata, rigatoni, tuffoli, maccheroni, mezze maniche, smooth and ridged penne, pennette, mezze penne, fusilli, lumache, curve and tubetti, plus "Chicchi di Grano" and "Mista", a mix of seven shapes.

Spaghetti cook in 9–11 minutes and paccheri in 12–14 minutes; times for other shapes are given on the product pages.
