Mlekovita Diamenty Konesera
Also known as: Diamenty Konesera, Connoisseur's Diamonds
Mlekovita Diamenty Konesera is a Polish range of long-ripened cheeses: Cheddar Old, Gouda Old, Księżan Old, Mazdamer Old and Tylżycki Old.
Mlekovita Diamenty Konesera ("connoisseur's diamonds") is a range of long-ripened cow's milk cheeses from the Polish dairy cooperative Mlekovita.
The range has five cheeses, each with its ripening time in the name: Gouda Old and Tylżycki Old, 3 months; Księżan Old, 4 months; Cheddar Old, 9 months; and Mazdamer Old, 12 months. The producer calls Księżan the most original of them: slightly piquant, and sharper the longer it ripens; it is also sold as a block, slices and a wedge. The cheeses ripen under carefully chosen conditions; the standard pack is a 200 g piece.
In style these are aged versions of familiar types: Cheddar, Gouda, a Maasdam-type cheese and Tilsiter. With time the cheese loses moisture and becomes firmer and more intense.
How to serve: in thin slices or cubes on a cheese board with nuts and fruit, with wine; grated over pasta, salads and bakes.
The range is listed under hard cheeses as an example of Polish long-ripened cheese.
