Pasta Zara Linea All'uovo
Pasta Zara's egg pasta line: dry tagliatelle made from durum wheat semolina, eggs and water, cooking in 4–5 minutes.
Pasta Zara Linea All'uovo is the dry egg pasta line of Pasta Zara. According to the official site it has one shape, tagliatelle, flat ribbons sold in 500 g packs. The ingredients are durum wheat semolina, eggs and water; the maker does not state the share of egg. The wheat is grown in EU and non-EU countries and milled in Italy, and the dough is made with spring water from the Dolomites.
The egg tagliatelle cook quickly, in 4–5 minutes, about twice as fast as the semolina-only tagliatelle of Linea Speciale (8–9 minutes). Egg makes the dough more yellow and more porous, so the ribbons take up sauce well.
Tagliatelle are traditionally served with meat ragù, mushrooms and cream or cheese sauces. The line belongs to egg pasta and is the only egg product in the Pasta Zara range; all other lines are made from semolina and water only.
