Tress Großmutters Küche
Tress rolled egg noodles and Spätzle made the grandmother's way from durum semolina and fresh eggs; the Spätzle and Knöpfle carry the "Schwäbische Spätzle" PGI.
Tress Großmutters Küche ("grandmother's kitchen") is a line of noodles and Spätzle that Tress makes in Münsingen on the Swabian Jura. According to the official website, only sun-ripened durum wheat semolina and eggs, cracked fresh at the plant every day, go into the dough. Before shaping, the dough rests so that the ingredients bind well and develop their full aroma.
For the rolled noodles, the dough passes through several rolling stations and is rolled thin, just as grandmother did with a rolling pin. The dough "springs back" after each pass, so the noodles stay light inside and get a rough surface to which sauces cling well. The Spätzle are made traditionally: after resting, the soft dough is scraped or dropped into a water bath. Thanks to the resting and rolling, products of this line swell noticeably more when cooked.
The producer notes that since 2012 "Schwäbische Spätzle" and "Schwäbische Knöpfle" have been protected in the EU: they must be made in Swabia under strict controls on ingredients and method. The protected geographical indication label also appears on Tress Spätzle and Knöpfle packs. The rolled noodles suit festive menus, the Spätzle classic Swabian cooking.
