Tress Original Dinkel Vollkorn

Tress Original Dinkel Vollkorn is the wholegrain spelt pasta line that Tress is especially proud of. According to the official website, the grain is grown, milled and processed exclusively in the Swabian Jura biosphere reserve. From field to mill to the plant in Münsingen, the spelt travels only a few kilometres; the short supply chain protects the grain and the environment and keeps the added value in the region.

It is a wholegrain pasta, as its brown colour shows: the cleaned spelt grain is milled whole, so the flour keeps the valuable components of the entire grain. Tress processes the wholegrain spelt flour to its own Swabian house recipe, using a specially developed gentle method that brings out spelt's fine nutty flavour. Spelt ribbon noodles are among the products of the line.

The producer notes that since 2017, following a European Commission decision, spelt products must refer to wheat in the ingredient list; the pack therefore reads "Dinkel-Vollkornmehl (Weizenart)", though the recipe has not changed. Spelt was once the most important grain on the Swabian Jura and is now grown there again. The pasta suits a balanced family diet; spelt contains gluten.
