Tress Pasta Tradizionale
Tress egg-free pasta to an Italian recipe: durum wheat semolina and Swabian Jura water, bronze dies – spaghetti, tagliatelle, mafaldine.
Tress Pasta Tradizionale is a Tress pasta line made to an original Italian recipe. According to the official website, these egg-free noodles use only durum wheat semolina and water from the Swabian Jura biosphere reserve. The dough rests before processing so that the semolina proteins can develop and the pasta gains its particular aroma. It is thus an Italian-style dry durum wheat pasta.
All shapes in the line – spaghetti, tagliatelle, mafaldine and others – are made with bronze dies ("al bronzo"): the dough is pressed through special bronze moulds. This makes the surface noticeably rough, so it holds sauces, fish stock or pesto better. The combination of raw materials, traditional method and very gentle drying helps the pasta stay al dente.
The spaghetti of this line were formerly sold under the name "Tress 100%". Pasta Tradizionale is made in Münsingen on the Swabian Jura. It suits classic Italian dishes: spaghetti with tomato, seafood or pesto sauces, tagliatelle with cream sauces, and mafaldine with thick ragùs such as bolognese. The Tress website offers many recipes with this pasta.
