Crémant de Limoux is a sparkling wine from around the town of Limoux, in the Pyrenean foothills of southern France, in the Languedoc area. Limoux is considered one of the oldest sparkling wine areas. It is a protected appellation, a PDO. The wine is made by the traditional method: the second fermentation happens in the bottle.
The main grapes are Chardonnay and Chenin Blanc. Mauzac, a local grape, and Pinot Noir are added. By the rules, the wine must age on its lees for at least a year, which gives it a soft taste and fine bubbles. White and rosé wines exist. The climate of Limoux is cooler than on the rest of the Languedoc coast, which preserves acidity.
Crémant de Limoux is related to Champagne in method but costs less. In France the word crémant refers to sparkling wines made by this method outside Champagne. Other sparkling wines are made nearby, for example Blanquette de Limoux from Mauzac. Crémant de Limoux works well as an aperitif and with seafood.
