Dos Hombres is a mezcal brand by actors Bryan Cranston and Aaron Paul. According to the brand's website, the mezcal comes from the small village of San Luis del Río in Oaxaca and is made by third-generation maestro mezcalero Gregorio Velasco. The main product is Espadín mezcal, 42% ABV in a 750 ml bottle. The brand has since added tequila made in Jalisco from blue Weber agave.
How it is made. According to the brand, espadín agave grows at least six years before harvest. The piñas are quartered and baked for four days in earthen pits with hot stones, then crushed by a stone wheel, usually pulled by a donkey. The mash ferments for 7 to 10 days in wooden tubs with mountain spring water, becoming a tepache, which is distilled in copper stills over about two days.
Range. The mezcal range is Espadín and a limited-edition Tobala, which the brand describes as made from rare wild agave.
Mexican rules. Under NOM-070-SCFI-2016, mezcal may be made from agave species of the genus Agave grown in the authorised area, and labels must show the scientific or common name of the agave used. Strength is 35–55% ABV at 20 °C. For artisanal mezcal, cooking is in pit or raised masonry ovens, milling may use a tahona, and distillation is in direct-fire copper stills or clay pots. Blanco or joven means a colourless mezcal that has undergone no later process.
