Garofalo Casarecce Integrali is a short twisted or rolled pasta from the Garofalo Pasta Integrale Biologica range. Shape type: casarecce. Garofalo is a pasta maker from Gragnano near Naples, founded in 1789.
Ingredients: organic wholemeal durum wheat semolina. It is drawn through bronze dies, which gives it a rough surface. Thickness 1.2 mm, length 41 mm.
Cooking time: 10 minutes. Pack size: 500 g. As with any dry pasta, it is cooked in plenty of boiling salted water, about one litre per 100 g, and drained while still firm to the bite. Twists and folds trap sauce: pesto alla genovese, vegetable sauces, meat ragù and cold pasta salads all suit this shape. The same shape is also sold in the Garofalo Strapasta and Garofalo Pasta Senza Glutine ranges.
