Also known as: caserecce, casareccia

Short dry pasta rolled and folded like a small piece of parchment; De Cecco gives a cooking time of 11 minutes.

Casarecce (singular: casareccia) are a short dry pasta made from durum wheat semolina and water (DPR 187/2001, art. 6). De Cecco describes the shape as a small smooth piece of parchment, rolled up and folded in at the top.

According to De Cecco, casareccia is originally from Sicily but is also characteristic of other southern Italian regions. The name evokes home-made pasta; De Cecco links the shape to the Arab-style pasta busiata, made by wrapping pieces of dough around the thin stem of a plant. Its Casareccia n° 88 has a cooking time of 11 minutes, with al dente at 9 minutes.

De Cecco recommends it with classic ragù; the smooth, slightly porous surface also holds all kinds of other sauces, from traditional ones to the simplest.
