Bürger Schupfnudeln
Bürger's fresh, pre-cooked Swabian Schupfnudeln – potato finger noodles with 44% potato, wheat flour and egg, also a sweet-potato version.
Bürger Schupfnudeln is the Bürger company's line of fresh Schupfnudeln from Ditzingen. Schupfnudeln are a Swabian potato speciality: short, thick finger-shaped pieces tapered at the ends, also called Bubaspitzle in Swabia. Bürger's website describes them as all-rounders – a main course, a sweet dessert or a side dish.
The Schwäbische Schupfnudeln are sold pre-cooked and chilled in 400 g and 1 kg packs. Their ingredients: 44% potatoes, wheat flour, 7% whole egg, starch, rapeseed oil, salt, spices, glucose syrup, stabilisers and citric acid. The dough is potato-based with flour, so Schupfnudeln are structurally close to gnocchi but elongated. The line also includes Kartoffel-Schupfnudeln (among them Bubaspitzle in 1 kg packs) and Süßkartoffel-Schupfnudeln made with sweet potato.
Schupfnudeln are usually fried in a pan with butter until golden. The classic Swabian way is with sauerkraut and bacon; a sweet version comes with apple purée or cinnamon and sugar.
