Bürger Spätzle und Knöpfle
Bürger's fresh, pre-cooked Swabian Spätzle and Knöpfle from wheat and spelt flour with 18% whole egg, plus organic, spelt and high-protein versions.
Bürger Spätzle und Knöpfle is the Bürger company's line of fresh Swabian Spätzle and Knöpfle. They are sold pre-cooked and chilled, so they only need heating. Bürger notes that "Schwäbische Spätzle" carry the EU protected geographical indication, which also covers Knöpfle.
The main products are Schwäbische Eierspätzle (flat, typically shaped Spätzle) and Schwäbische Eierknöpfle (rounder button shapes), in 400 g and 1 kg packs. Their ingredients: wheat flour and spelt flour, water, 18% whole egg, salt, rapeseed oil and citric acid; the producer labels them lactose-free. They are therefore fresh egg pasta. The line also includes BIO Spätzle made from Bioland-quality ingredients (wheat flour, 18% whole egg, sea salt, sunflower oil), Dinkel-Knöpfle from spelt flour with a wholegrain share and 16% egg, and High Protein-Spätzle.
Spätzle go into boiling salted water for about 2 minutes, or into a pan with butter for about 8 minutes (Knöpfle for about 3 minutes). They are served with gravy, with breadcrumbs or cheese, as a side dish for roasts, or in bakes.
