Pastificio Latini I Trucioli di Marchesi
Large dry pasta shaped like wood shavings, created for Pastificio Latini by chef Gualtiero Marchesi for Expo 2015.
Pastificio Latini I Trucioli di Marchesi is a single pasta shape signed by the Italian chef Gualtiero Marchesi. He devised it when he became an ambassador of wheat for Expo 2015 in Milan. Marchesi consulted his long-time friend Maurizio Riva, a woodworker well known in architecture and design, who suggested a shape like a wood shaving – in keeping with Expo's theme of reusing waste.
The trucioli are made from a blend of Italian durum wheat, extruded through a bronze die and dried at 45 °C. They are large, thick and irregular; they cook in 14 minutes and, according to the company, do not overcook even if left longer. 50 g of trucioli are 14 pieces.
The company presents them as an alternative to paccheri and schiaffoni. They are cooked with traditional sauces such as carbonara, amatriciana, meat ragù, fish or vegetables, and with thick creams of legumes and vegetables; they can also be served cold in salads or hot in soups.
