Wholegrain pasta is milled from the whole kernel, including bran and germ, so it is darker, contains more fibre and has a nuttier taste than pasta made from refined semolina. It usually needs a little longer to cook. It goes well with robust sauces – vegetables, legumes, anchovies, or tomato with chilli. Trenette are flat long ribbons from Liguria traditionally served with pesto; tagliatelle are usually egg pasta, but here they are a dry wholegrain version.
