Pastificio Latini Le Matassine Speciali
Pastificio Latini egg pasta in hand-formed nests, made from Italian durum wheat semolina and fresh eggs from Italian barn-raised hens.
Pastificio Latini Le Matassine Speciali are egg pasta nests made with particular attention to hand work. As Carlo Latini explains on the official site, he uses semolina of Italian durum wheat and fresh eggs from hens raised on the ground in Italy. The dough is kneaded slowly, gently and cold to preserve the value of the ingredients. In the key stages – rolling out the sheet, cutting and forming the nest – he gave up superfluous technology in favour of manual work. To keep the flavour, each nest is formed and laid on a frame by hand and then dried at a very low temperature.
The shop lists chitarra, fettuccine, pappardelle, tagliatelle, tagliolini and thin tagliolini, all as egg pasta nests, plus a mixed egg pasta pack.
Pappardelle suit game or mushroom ragù, tagliatelle and fettuccine go with bolognese sauce or butter and Parmesan, and the square-cut chitarra, like spaghetti alla chitarra, with tomato and meat sauces.
