Pastificio Latini Linea Rossa is the main dry pasta line of the Osimo pasta maker; the pasta itself is called '600.27'. According to the company, it is made from semolina of tenacious Italian durum wheat varieties – golden, even and velvety – extruded through classic bronze dies and carefully dried at low temperature to keep its qualities. The aim is a clear, lasting aroma, flavour and texture and pasta that holds its shape well during cooking.
The shop divides the line into long pasta, short pasta and large formats. It includes spaghetti, spaghettini, thick Spaghetti Grandi, spaghetti alla chitarra, trenette and fettuccine; penne, rigatoni, fusilli, mezze maniche, strozzapreti, tubetti, maccheroni and Maccheroni Vintage; and, among the large shapes, ridged paccheri and mezzi paccheri. Mixed packs are also sold.
It is everyday pasta for tomato sauces, carbonara, amatriciana, aglio e olio and seafood dishes; trenette are traditionally served with pesto.
