Pastificio Latini Cappelli 1915
Pastificio Latini dry pasta from semolina of the old Italian durum wheat variety Cappelli, registered in 1915.
Pastificio Latini Cappelli 1915 is dry pasta made from the old Italian durum wheat variety Cappelli. In 1991 Carlo Latini began growing this variety again. It was selected by the geneticist Nazareno Strampelli, from Castel Raimondo in the province of Macerata, and in 1915 it was the first variety entered in the Italian register of selected seeds (ENSE) – hence the name of the line.
The Spaghetti Cappelli Originale 1915 are made from 'semolato', a slightly coarser, fibre-rich milling, and are faintly amber in colour, like the ear of this wheat. The company describes their flavour as intense and their cooking resistance as very good.
The shop lists Cappelli spaghetti, trenette, casarecce, fusilli grandi, maccheroni, paccheretti (small paccheri), smooth and ridged penne, rigatoni and trucioletti, plus a large 6 kg pack. The company suggests first tasting the Cappelli spaghetti plain or with just a drizzle of extra virgin olive oil, to appreciate the taste of the grain.
