Carlo Latini's pasta maker in Osimo (Marche), making dry and egg pasta only from Italian durum wheat and growing the Cappelli variety again since 1991.

Pastificio Latini is Carlo Latini's pasta maker in Osimo, in the province of Ancona in the Marche region. The company's motto on its site is 'solo grani duri italiani' – only Italian durum wheat. In 1991 Carlo Latini began growing again the old Italian durum wheat variety Cappelli. It was selected by the geneticist Nazareno Strampelli, a native of Castel Raimondo in the province of Macerata, and in 1915 it became the first variety entered in the Italian register of selected seeds (ENSE). Pasta from this wheat is sold as Pastificio Latini Cappelli 1915.

The main dry pasta is Pastificio Latini Linea Rossa, called '600.27': it is made from semolina of Italian durum wheat, extruded through classic bronze dies and carefully dried at low temperature. The other lines are the wholegrain Pastificio Latini L'Integrale; two egg pasta ranges, Pastificio Latini L'Indomabile (tagliatelle and tagliolini) and the hand-formed nests of Pastificio Latini Le Matassine Speciali; and Pastificio Latini I Trucioli di Marchesi, a shape created with chef Gualtiero Marchesi for Expo 2015.

The range covers dry durum wheat pasta (spaghetti, trenette, fettuccine, paccheri, mezze maniche, rigatoni) and egg pasta. The company's site has a recipe section and a newsletter, where the pasta appears with classic sauces such as carbonara and amatriciana.
