Verrigni organic dry pasta made from semolina of the old Italian durum wheat variety Cappelli.
Verrigni Cappelli Bio is the organic line of Antico Pastificio Rosetano made from semolina of the Cappelli (Senatore Cappelli) variety. This is an old Italian durum wheat bred by the agronomist Nazareno Strampelli in the early 20th century. The packs read 'semola Cappelli bio' – semolina of organically grown Cappelli durum wheat – and the maker itself calls it 'antico grano biologico Cappelli'.
Verrigni has long worked with organic raw materials: according to the company, it started making pasta from durum wheat grown without chemical fertilisers, herbicides and pesticides several decades ago, and today it also produces biodynamic pasta certified by Demeter. Like the rest of the range, the organic pasta is mixed with Gran Sasso water and dried slowly at low temperature.
The online shop lists four shapes: Spaghetto Cappelli (spaghetti), Chitarrone Cappelli (thick square-section spaghetti, like spaghetti alla chitarra), Pennotta Cappelli (square penne) and Soqquadro Cappelli. The line is for those who choose organic food and old wheat varieties.
