Divella Pasta Trafilata al Bronzo
Divella range of dry pasta made from durum wheat semolina and water, pressed through bronze dies and slowly dried: nine shapes.
Divella Pasta Trafilata al Bronzo is Divella's range of dry pasta pressed through bronze dies. According to the official site, it contains durum wheat semolina, selected from the best batches, and water — nothing else.
What sets the range apart is the process. After kneading, the dough is pushed through bronze dies and then dried slowly. According to Divella, the bronze gives the pasta a rough, porous surface that holds sauces well. Pasta from the standard Pasta di semola range comes out smoother.
The range has nine shapes: Spaghettoni n. 5, Spaghetti Ristorante n. 8, Squadretti n. 13, Linguine n. 14, Rigatoni n. 17, Elicoidali n. 22, Penne Ziti Rigate n. 27, Fusilli n. 40 and Paccheri Napoletani n. 80. Bronze-die Spaghetti Ristorante cook in 9–11 minutes, longer than the standard version from Pasta di semola, which takes 7 minutes.
The range is meant for dishes where the sauce should cling to the pasta: tomato sauces and sauces with seafood, vegetables or meat. As it is made only from semolina and water, it is not suitable for people with coeliac disease.
