La Fabbrica della Pasta Gli Integrali is the wholegrain line of La Fabbrica della Pasta, the Moccia family's pasta factory in Gragnano near Naples. It has six shapes: fidanzati capresi, elicopenna, fusilloni, spaghetti, bronze-drawn scialatielli and ridged paccheri di Gragnano. Unlike the main range, these shapes are not labelled PGI on the official site.
Like the rest of the company's pasta, the line is drawn through bronze dies, which gives a rough surface, and dried slowly at low temperature. Wholegrain pasta keeps the bran of the grain, so it is darker, contains more fibre and has a fuller, slightly nutty taste than pasta from refined semolina; it usually needs a minute or two more in the pot than the white version.
The shapes suit vegetable sauces, legumes, olive oil and garlic, anchovies and robust tomato sauces. Spaghetti integrali work well with simple oil-based dressings, while paccheri and fusilloni hold chunky vegetable sauces. The line belongs to dry durum wheat pasta.
