Leonardo Carassai Tagli classici
Leonardo Carassai's classic egg pasta cuts: tonnarelli, linguine, fettuccine, tagliatelle, pappardelle, chitarra, maltagliati and pasta sheets.
Leonardo Carassai Tagli classici is the core range of classic egg pasta cuts from Pastificio Leonardo Carassai in Campofilone. According to the product sheets, most cuts are made of durum wheat semolina, fresh eggs (30%) and type 00 soft wheat flour; the tonnarelli and the pasta sheets use semolina with 33.4% fresh eggs.
The range includes tonnarelli (10–12 minutes), linguine (1–2), fettuccine (2–3), tagliatelle (3–4), fili di chitarra (3–4), pappardelle and pasta alla chitarra (4–5) and maltagliati (2–3), plus egg pasta sheets. The ribbons are about 50 cm long and sold in 250 g packs; the site lists the Maccheroncini di Campofilone IGP in the same group.
These are dried egg pastas, so they cook much faster than water-based durum wheat pasta. Tagliatelle and pappardelle suit bolognese and other meat ragù, chitarra and tonnarelli suit cacio e pepe or tomato sauces, and the sheets are used for lasagne.

- Lasagne sheets — Wide flat rectangular sheets of pasta layered with sauce and baked in lasagne; for example, Barilla makes them from durum wheat semolina and fresh eggs.
