Leonardo Carassai Tagli speciali is the flavoured egg pasta range of Pastificio Leonardo Carassai. The base is the same as in the classic cuts – durum wheat semolina, fresh eggs (30%) and type 00 soft wheat flour – with a flavouring listed with its share on each product sheet.
Fettuccine di Campofilone come with basil, porcini mushrooms or nettle (3% each), chilli (3%) or saffron pistils (0.02%); linguine are coloured with cuttlefish ink (4%); chitarra is flavoured with garlic and parsley or with black summer truffle aroma. Chitarra with lemon juice (4%) is made of semolina and 33.4% eggs without soft wheat flour, and two wholegrain versions with wheat germ – fettuccine and chitarra – use organic whole durum wheat semolina and 33.4% organic eggs.
Linguine cook in 1–2 minutes, fettuccine in 2–3 and chitarra in 2–5. These ribbons need little more than butter, olive oil or a light sauce; the cuttlefish-ink linguine suit seafood.
