🍷 Pedro Ximénez Sherry

Type of wine ✔ Checked: 10.2026 · sources: 2 Updated:

A very sweet dark wine from sun-dried Pedro Ximénez grapes.

Pedro Ximénez is a very sweet, dark wine made from sun-dried grapes of the grape of the same name. It is made in Jerez in southern Spain. Similar wines are made in Montilla-Moriles.

After harvest, the grapes are spread in the sun for several days. The berries turn into raisins and become very rich in sugar. The juice is pressed and fermentation is stopped by adding spirit. The wine is then aged in barrels under the solera system. The result is a thick, dark, syrupy drink. It often has 300-400 g/L of sugar or more.

The taste recalls raisins, figs, honey and sweet spices. In style it is close to cream sherry but not identical. Similar wines exist in Málaga and among Moscatel sherries. Pedro Ximénez is served in small portions and is sometimes poured over ice cream. It counts as Spanish wine. Sweet wines of this type are usually served after the main course, in small glasses.
