🍷 Prosecco
A light Italian sparkling wine from the Glera grape, usually made in tanks.
Prosecco is a light Italian sparkling wine from the north-east of the country, from Veneto and Friuli Venezia Giulia. The main grape is Glera, which must make up at least 85%. Since 2009 the name has been protected: there is the Prosecco DOC zone, and the best hills of Conegliano and Valdobbiadene hold the top DOCG status.
Most Prosecco is made by the Charmat method. The second fermentation happens not in the bottle but in a large closed tank under pressure. This keeps fresh aromas of pear, apple and white flowers. Alcohol is usually 10.5–11.5%. There is spumante, fully sparkling; frizzante, lightly sparkling; and col fondo, fermented in bottle with its sediment.
By sweetness many Proseccos are Extra Dry, with a bit more sugar than brut. Prosecco is the base of the popular Spritz and Bellini cocktails. It is one of the world's best-selling sparkling wines and a key part of Italian wine. It is drunk young and chilled.
