Barilla Al Bronzo
Barilla range of bronze-die dry pasta made from 100% Italian-grown durum wheat.
Barilla Al Bronzo is a range of dry durum wheat pasta that Barilla extrudes through bronze dies. According to the official website the ingredients are durum wheat semolina and water, and the wheat blend is made entirely of durum wheat grown in Italy.
The main difference is how the pasta is shaped. The rough bronze die, which Barilla calls 'bronzo grezzo', leaves a rough, porous surface that holds sauce better. The company also points to an amber-yellow colour and a firm texture that holds up during cooking.
The range has 11 shapes: spaghetti, spaghettoni, square spaghetti (spaghetti quadrati), linguine, fusilli and the larger fusilloni, penne rigate and mezze penne, mezzi rigatoni (shorter rigatoni), riccioli and tortiglioni. Al Bronzo spaghetti are thicker than the classic ones and cook in 11 minutes; 100 g of dry pasta contain 14 g of protein.
The range is meant for dishes where the sauce should coat the pasta closely: tomato sauces, seafood sauces and vegetable ragù.
